Sauteed Spinach and Kale with Tomato, Roasted Red Peppers, Egg and Bacon

Why did the pig go into the kitchen?
He felt like bac-on.


If you can't already tell....the Week of Salads for Dinner is starting to digress.  I unfortunately (or fortunately, depending on who you ask) was thinking about bacon this afternoon and it was all downhill from there.  Here's a "salad" that can be eaten anytime of the day: breakfast lunch or dinner.  Sauteed Spinach and Kale with Tomato, Roasted Red Peppers, Egg and Bacon.

Here's what you need:
2-3 slices of bacon
1 vine tomato
2 thick roasted red pepper slices
2 hard-boiled eggs
1/2 a bunch of kale
1 whole bag of spinach, or about 6 oz.
salt and pepper to taste



Get your bacon cooking.....mmmm bacon.

While the bacon is cooking, slice up a tomato.

Slicey slice.

Chop/slice up two thick slices of roasted red peppers.

Snack on some....(just not all)

Get out two hard-boiled eggs.  If you need to hard-boil some: place eggs in pan with water covering the surface, cover and bring to a boil.  Allow eggs to boil for 1-2 minutes, then cut off the heat and with the lid on let stand for 12 minutes.  Perfecto eggs, every time.

Peel'um.

Smelling the bacon yet?  Lookin' good and greasy.

Grab a plate and place some folded paper towels on top.

Let the bacon hang out there, de-grease and get crispy.

Bacon grease....oh yes, we can use that for something.

Throw in half a bunch of kale (stems snapped off and torn into smaller bite sized pieces), salt and pepper.

Add tomato slices.

Add roasted red pepper pieces.

Miiiix it all up.  Let the kale get tender.

The juices from the tomato and roasted red pepper with help deglaze the pan.

Once kale is tender, add 1 full bag of spinach (it will cook down, I promise).

Start carefully mixing...

Keep goin'

Get ready to plate up!

Add spinach-kale mixture and top with sliced hard-boiled egg (in any fancy fashion you feel like).

Pepper the top, no need to salt (remember! there's bacon! bacon bacon, bacoooooon).

Add a slice of crispy bacon.  Tuck it in all nice and cozy.
