Spam and Eggs

Why did the chicken jump in the lake?
Cause the rooster egg-ed her on.


On the weekends my hubby takes time to make himself an actual breakfast, made of food, well, food he has to chew.  This morning, he decided to make one of his favorite breakfasts-es-siz....breakfastzes... Spam and eggs.

Yes, you heard me right, spam.

Cue the wrinkled up faces and thoughts of grossness.  If you can't tell, this is not my go-to weekend long-cook meal (can someone say french toast? stupendous.).  But, if you, like my husband, are feelin' the need for some grease on your bones, go for it.

Here's what you'll need:
2 eggs
4 oz of Spam
1-2 teaspoons of greek yogurt
1-2 teaspoons of milk, or cream, if you're feelin' extra decadent (I mean, you are about to eat Spam)
Salt (we like rosemary salt, which is basically salt baked with rosemary)
Pepper
1-2 skillets, you can cook all in 1 if you desire Spam-flavored eggs
Salsa or hot sauce
Cheese for topping



Heat up a cast iron skillet if you've got one.  If you don't, go get one, cause they are awesome.

Slice Spam.

Get out 2 eggs and crack them into a bowl.

Add 1-2 teaspoons of greek yogurt and 1-2 teaspoons of milk or cream to eggs.

Beat'um up.

Add salt and pepper to taste.  Beat'um up some more.

Add Spam slices to the hot skillet.

Let them get good and goldeny-brown before you flip them (about 2 minutes on each side).  Flip the spam over to get (insert fancy-type my hubby used) or caramelized on both sides.  Sure, he can use fancy words, but he's the one making Spam for breakfast.  "Bonjour fancy french cafe, I would like a cafe au lait, some other fancy stuff, and Spam"......yeah, right.

While (or After, if you are using 1 skillet) you get the Spam all fried and delicious looking, start cooking up your eggs.  We used 2 skillets here, so first step was to let some melty butter coat the bottom of the pan.  Why?  Cause sometimes you just need that butter flavor.

Add beaten eggy mixture to pan.

Keep moving the eggs around, also known as scrambling, until desired cookness achieved.  (about 2 minutes)  So as not to overcook, you can turn of the heat the last 30 seconds or so, to finish cooking the eggs.  Or if you really want to take you time, cook'um low and slow, we just didn't have the patience this morning.

Get your Spam out and blot.  I asked why he blots the Spam, and my husband replied "eh", which I guess means, because it makes him feel better about eating it as long as he can get 1/2 teaspoon of grease off.


Whats under the covers? Meaty-ish goodness?!

Put Spam on plate.  Add eggs.

Add desired hot sauce, salsa, cheese and or whatever peppery-ness you feel like.
