I must have been on some kind of Thyme-Lemon kick the other day, because in addition to the tasty Raspberry Lemon Thyme Smash we also had this beauty for dinner.
This is my new favorite way to cook salmon. It came out absolutely flaky, moist and delicious. Since outside has been full of rain, grilling was not an option. Into the oven dinner goes! (or on the stove-top if your name is Kale).
Healthy, somewhat fast (under 40 minutes), and warm.
Here's what you need (for 2 people):
For the Salmon:
1 big ol piece of salmon
1-2 teaspoons of extra virgin olive oil
1-2 teaspoons of lemon zest
1/3-1/2 teaspoon of fresh thyme
salt and pepper to taste
For the Kale:
1-2 teaspoons of extra virgin olive oil
1 teaspoon of garlic, chopped/minced
2-3 large handfuls of kale
1 teaspoon of fresh lemon juice
salt and pepper to taste
Pre-heat oven to 275 degrees and line a baking dish with foil (easy cleanup, far away high five!)
Rinse salmon with cold water, pat dry with paper towels.
Place fish skin side down, rub fish down with 1-2 teaspoons of olive oil, top with fresh lemon zest, thyme, salt and pepper. Bake at 275 degrees for 30 minutes or until center is just opaque.
For Kale: 5 minutes before fish is done, add olive oil to a large pan on medium heat.
Add 1 teaspoon of freshly minced-chopped-ish garlic.
Add a bunch of kale (it will cook down).
When putting kale (or spinach) back in the fridge, I always add a paper towel to the bag. This makes it keep longer and not get as soggy.
The husband was really tired from making cocktails...(wink, wink, nudge, nudge).
Add fresh lemon juice to kale. Cook until tender, turning down the heat if necessary (we like ours a little crunchy).
Take fish out of the oven. let rest a minute-ish while you finish up the kale.
Split the fish in half and plate up with kale. Squeeze more fresh lemon juice on-top of everything before serving.
