Oatmeal Crazy'n Pecan Cookies

What kind of keys do kids like to carry?
Cook-ies.

My absolute favorite dessert to eat is vanilla creme brulee.

My favorite dessert to make is cookies.  More specifically, Oatmeal Crazy'n Pecan Cookies.  These are super easy to make (yay), healthy-ish (well, they are cookies), and taste really good with coffee (don't judge).

Here's what you need
3 eggs
1 teaspoon vanilla
1 cup crazy'ns, or raisins, or whatever you're feelin' like -ins
1 cup butter
1 cup brown sugar
1 cup white sugar
2 1/2 cups flour
1 teaspoon of salt
1 teaspoon of cinnamon
2 teaspoons of baking soda
2 cups oatmeal
1 cup chopped pecans
Parchment paper
Cookie Sheet
Cookie Rack
Cookie Jar




First, take out everything you need.  This is important because (1) you'll need everything to make these and (2) you need to give the butter time to hang out on the counter and warm up to room temperature.

Get a bowl.  Crack in the 3 eggs.  Check for any shell pieces that might have taken a suicide dive into your bowl.  No shells?  Far away high five!

Beat up the eggs.


Add 1 teaspoon vanilla.

Give it a stir.  And 1 cup crazy'ns (or the whatever you're feelin' like ins).

Give it a few stirs.  You want the crazy'ns to be evenly-ish covered in the egg and vanilla mixture.

Let that sit and soak for an hour.  Go watch Archer and/or dance around the kitchen to Florence and the Machine.

After an hour, preheat your oven to 375 degrees fahrenheit.

Chop, smash, and/or open 1 cup pecans and get them down to a size you feel cookie-comfortable with.

Get out your mixer.  Use the paddle attachment (or something similar).

Unwrap 1 cup butter (very important!) and drop into mixer bowl.

Drop in 1 cup brown and 1 cup white sugar.

Cream the threesome together. Scrape down the sides as needed.

Add 2 1/2 cups flour, 1 teaspoon salt, 1 teaspoon cinnamon, and 2 teaspoons baking soda to the party.



Mix'um up.  Add, egg-vanilla-cray'n mixture to the party.  Mix some more.  Scrape down the sides some more.

Let 2 cups oatmeal and 1 cup chopped pecans arrive to the party fashionably late, and stir them in with (whichever is handy) a spatula, fingers or a wooden spoon (stirring helps work those arm muscles!). These last ingredients will make the dough pretty stiff; that is okay.



Grab a cookie sheet.

And some parchment paper.

Grab a spoon and use it to drop the dough into cookie-size amounts onto the parchment covered cookie sheet.


Bake in the oven for 10 to 12 minutes until desired cookie-doneness achieved.


Place done cookies on rack to cool while you bake another round.  Will produce approximately 67-ish, 60 cookies (after you eat a few, to uh check the done-deliciousness, of course).
