Tropical Grill Chop Salad

When is an apple not an apple?
When it's a pineapple!


The grill-outs continue.  This salad is packed full of crunchy-sweet summer tastyness.  We had some jumbo frozen shrimp in the freezer, which makes for a quick de-thaw under cold water and a delicious dinner.

Here's what you need:
12 or so large shrimp
2 tablespoons of pepper jelly
chopped Pineapple
sliced and seeded sweet peppers
2 handfuls of chopped red and green cabbage (or other crunchy lettuce)
2 tablespoons of tomato basil feta (or plain, whatever you have on hand)
1 vine tomato
2 spoonfuls of balsamic vinegar
2 spoonfuls of extra virgin olive oil
1 lemon, juiced
salt and pepper to taste
drizzle of canola or vegetable oil
1-2 tablespoons of toasted silvered almonds and ramen noodles (take un cooked ramen noodles, break into pieces and toast with almonds until slightly brown)



Put your shrimp in a plastic bag.

Get some pepper jelly.  I love Merrilily (both the jam and the person who makes them).

Add 2 tablespoons of pepper jelly to the shrimp.

Seal up the bag and mix around.  Let hang and marinate in the fridge for an hour or two.

Once you are ready to cook, get out some pineapple.  I went ahead and cut up a whole can and had lots of leftovers, really you only need about (_) pieces for skewering.

Get you ingredients all ready for skewering.

Soak skewers in water for a few minutes.

Skewer marinated shrimp, sweet peppers and pineapple.  Top with salt and pepper and a drizzle of vegetable oil.  My husband likes to use two skewers for each because it makes it easier to flip on the grill.....after only using one, I saw his point.

Grill.

Prepare your bed of chopped cabbage and tomato basil feta (or whatever crunchy lettuce you have on hand).

Slice up some tomato to add to the party as well.

Yummmmm.....grilled.


Top on salad.

Or take off skewers...however you are feelin'.

Make a quick and easy dressing. 2 spoonfuls of balsamic vinegar.

2 spoonfuls of extra virgin olive oil.

Juice from 1 lemon.  Mix or whisk dressing together and top over salads.

We had some toasted silvered almonds and ramen noodles, so we topped it with that.
